Pistachios are the seed obtained from shelling the fruit of the plant. Native to the Middle East, they are well cultivated in southern Europe and the United States. Their taste and texture, but above all their colour, allow them to be used in a wide range of food and fantasy applications. The colour ranges from pale green to emerald green depending on origin and is favoured by early harvesting. Peeling enhances the colour and removes the skins that come off the shelled seed.
