Citric acid monohydrate is an excellent natural additive that is used in many situations in the kitchen and elsewhere.

In foodstuffs it is used as an acidulant to correct the pH of basic colourings, as an emulsifier (ice cream) and to prevent the crystallisation of sugar in caramel. It can be used as an additive in soft drinks, confectionery, jellies, jams, beers, carbonated drinks, and together with sodium bicarbonate, in effervescent preparations. For cheeses (mascarpone and ricotta).
