The yeast is made up of bacterial and fungal populations used to obtain an increase in the volume of the dough. This happens thanks to the production of carbon dioxide: in this way the products rise, becoming soft and fluffy. Yeast is divided into natural, to which brewer's yeast and mother yeast belong, and into chemical.
